Most beekeepers assume the danger is in the dead of winter, when temperatures are lowest and flowers are dormant. The counterintuitive truth is that spring — specifically late February through early April — is when most colonies actually starve. This happens because of how bees survive cold: they form a tight cluster around the queen, shivering their flight muscles to generate heat. The cluster stays warm by burning through their honey stores, but there's a critical catch: the cluster can only consume honey that is immediately adjacent to it. They don't move to find more.
In late January and February, the queen begins laying eggs again to build up population ahead of spring bloom. Brood rearing dramatically increases calorie consumption just as the cluster starts to expand. If the cluster is positioned on the wrong side of the hive from the remaining honey — a common situation after a cold snap shifts the cluster toward one corner — the bees will starve within inches of food they cannot reach. This is called "isolation starvation" and it kills more colonies than actual cold ever does. A 20-pound candy board placed directly above the cluster in February is often the difference between a surviving hive and a dead-out.
The fix is simple but requires preparation: go into winter with more food than you think you need, keep some of it in the form of hard candy or fondant that you can add in late winter without opening the hive in cold weather, and check stores on any mild day above 50°F in late winter by hefting the back of the hive.
Sugar syrup is the primary emergency food supplement for bees, but the concentration matters enormously because of when you feed it. The two common ratios are 1:1 (one pound sugar per pound of water) and 2:1 (two pounds sugar per pound of water). Each has a specific role based on the time of year.
1:1 syrup (spring and early summer) mimics a nectar flow, triggering bees to draw comb, raise brood, and build population. It's thin and easy to process, but bees need to evaporate most of its water content before capping it as honey — which means it is not suitable for winter stores because there's too much moisture for the bees to reduce before cold sets in. Feeding 1:1 syrup in fall virtually guarantees fermented, uncapped stores going into winter, which can cause dysentery and winter loss.
2:1 syrup (fall, August through September) is the right choice for building winter stores. Its higher sugar concentration means less water to evaporate, so bees can cap it before temperatures drop too far. The key deadline is when nighttime temperatures consistently fall below 50°F — bees won't accept or process syrup reliably below this temperature, and most feeders become ineffective as bees won't break cluster to reach them. This is why fall feeding has a firm cutoff date: you must finish feeding 2:1 syrup while nights are still warm enough for bees to work it down.
A useful formula: 2:1 syrup by weight = 2 lbs granulated white sugar dissolved into 1 lb (approximately 1 pint) of warm water. One gallon of finished 2:1 syrup contains approximately 7 lbs of sugar and weighs about 10.5 lbs. When processed by bees and capped, 7 lbs of sugar produces roughly 5–6 lbs of honey equivalent in stored food value.
Fondant (also called bee candy or sugar candy) and hard candy boards are the winter-safe alternatives when liquid syrup can no longer be fed. Both are essentially supersaturated sugar solutions that have been cooked and set into a solid or semi-solid form. Bees lick fondant directly when stores run low, making it the only viable emergency winter supplement without opening the hive to damaging cold.
Fondant advantages: can be placed directly above the cluster in winter without significant heat loss, immediately accessible to a hungry cluster without moving, no fermentation risk, no moisture contribution to the hive interior, and bees can access it even in very cold weather as long as it is touching or very close to the cluster. Commercial fondant (like those sold for bakeries) often works well, but check that it contains only sugar, water, and possibly invertase — no artificial flavors, corn syrup adulterants, or high-fructose corn syrup.
Fondant disadvantages: it is emergency food only, not a substitute for proper honey stores going into winter. Bees fed entirely on fondant all winter tend to build up more waste products (fondant lacks the enzymes and micronutrients in cured honey), which can cause dysentery during long confinement periods. Fondant also does not stimulate brood rearing the way liquid syrup does, which is mostly a feature rather than a bug in mid-winter but becomes a limitation if you're trying to build population in late winter. Cost per pound of sugar equivalent is also higher than bulk syrup feeding if you're buying premade fondant.
Practical rule: go into winter with full honey stores from fall syrup feeding or left-on honey supers, then keep fondant available as a late-winter backup. Place a 5-lb fondant patty or candy board above the cluster in February as insurance regardless of apparent stores — it costs very little and has saved many colonies that looked fine in December.
Knowing how much honey is actually in your hive before winter is critical for this calculator to give you accurate results. The standard rule of thumb: a fully drawn and capped deep Langstroth frame holds approximately 5–8 lbs of honey, with 6 lbs being a reliable average for planning purposes. A medium frame holds approximately 3–4 lbs. A shallow frame holds approximately 2–3 lbs.
These numbers vary based on frame depth, how completely the comb is drawn out, and the moisture content of the honey. To get a more precise estimate without harvesting, use the "heft test": stand behind your hive and lift the back edge slightly off the landing board. A well-provisioned Langstroth deep full of bees and honey for winter should feel quite heavy — north of 60–80 lbs total. A light hive that tips up easily with one hand is a hive that needs feeding immediately.
If you have a kitchen scale and don't mind briefly removing frames, weigh a capped frame, subtract the weight of an empty frame (typically 1–1.5 lbs for a wooden deep frame), and the remainder is your honey weight. Do this on several frames and average them for the most accurate count. The best time to assess stores is during the last warm spell of fall before you close the hive for winter — typically October in moderate climates, September in cold northern zones.

Below about 50°F, bees cluster tightly and won't break cluster to reach a feeder — and even if they did reach it, they cannot evaporate the water from liquid syrup in cold temperatures, so it would sit unprocessed, potentially fermenting and adding unwanted moisture to the hive. Once nights are consistently below 50°F, switch to fondant or candy boards placed directly above the cluster, with no gap that forces bees to break cluster to access it. The fondant goes right on top of the frames, or on a rim spacer, touching the top of the cluster so bees can reach it without venturing into cold air.
Feed 2:1 sugar syrup as aggressively as possible on any warm day above 50°F — large-capacity feeders like top feeders or in-hive frame feeders move more syrup faster than entrance feeders. At the same time, make a candy board now so it's ready to deploy in early winter as a backup. If you're in a cold climate and nights are already cold, your window for syrup feeding is narrowing fast. In the most urgent situations, some beekeepers place dry granulated sugar directly on a paper towel above the frames as an emergency measure — bees will use the moisture in the hive air to dissolve and consume it, though this is far from ideal and not a substitute for proper stores. For hives that are severely light on stores in late October or November in cold climates, survival odds drop sharply and the most humane option may be combining weak colonies into one strong hive that can overwinter successfully.
The most reliable recipe: bring 5 lbs of granulated white sugar and 1 cup of water to a boil, stirring until fully dissolved, then cook to the hard-crack stage (300°F on a candy thermometer) without stirring after it comes to a boil. Pour immediately into a wooden frame the same dimensions as your hive body (typically built from 1x2 lumber around a piece of hardware cloth), let it cool and set overnight, then place it above the cluster in late January or February. Some beekeepers add 1 tablespoon of apple cider vinegar per 5 lbs of sugar, which lowers pH slightly and may reduce nosema. Others add pollen substitute powder to the top surface to give bees protein access in late winter. The hard candy in a rim board — sometimes called a "mountain camp" style when using dry sugar on paper — is the simplest version and widely used in northern states.
The absolute survival minimum depends heavily on your climate, but as a general guide: 30 lbs for warm southern climates with a short winter, 60 lbs for moderate climates with 4–5 month winters, and 80–100 lbs for cold northern climates and Canada. These are minimums, not targets — bees starve fastest when stores run out in late winter just as brood rearing peaks, so having excess is always the safer choice. Many experienced northern beekeepers target 80–90 lbs of stores for a 10-frame Langstroth going into winter and still keep candy boards ready. The cost of feeding a hive in fall is far lower than the cost of replacing a dead colony in spring.
A smaller cluster burns fewer calories to maintain core temperature, so it consumes less honey over winter. This seems like a survival advantage, but small colonies are also more vulnerable to the cluster becoming too small to generate adequate heat during a severe cold snap — bees can freeze even with stores nearby if the cluster falls below a critical thermal mass. A strong 8–10 frame colony going into winter is generally safer not only because it has more food reserves but because it maintains a more stable cluster temperature through the worst cold. If you have a weak colony in fall, the standard recommendation is to combine it with another colony rather than trying to overwinter a nuc-sized cluster in a cold climate.
