Why Goat Milk Makes Different Cheese Than Cow Milk

Pasteurized vs. Raw Goat Milk for Cheese

Raw goat milk makes better aged cheese. The native microbiome of raw milk — the lactobacilli, yeasts, and molds that live on the goat's skin and in the milking environment — contribute to the complex flavor development in aged cheeses that cannot be replicated with added cultures alone. If you are aging a goat cheese for more than 60 days, raw milk is strongly preferred for flavor depth.
