Grain Ratios: What the Numbers Actually Mean

The ratio in kefir making refers to the weight of grains compared to the weight of milk. A 1:10 ratio means 1 gram of kefir grains for every 10 grams of milk. Since 1 cup of milk weighs approximately 240 grams, a standard 1:10 ratio batch using 4 cups of milk needs about 96 grams of grains. This is the most commonly recommended starting ratio for healthy, active grains that you've been maintaining for a while.

The 1:20 light ratio uses half as many grains for the same volume of milk. This produces a milder, less tangy kefir with a longer fermentation window — useful when your grains are multiplying faster than you can use them (so you want to stretch them further), or when you prefer a gentler flavor. The tradeoff is a slightly longer ferment time and a thinner, more liquid result compared to standard ratio batches.

The 1:5 thick ratio doubles the grain density relative to standard. More grains means more microbial activity, faster acidification, a tangier and often thicker end product, and a shorter ferment window. This is the ratio to use if your kitchen runs warm, if you want to shorten your cycle time, or if you've noticed your grains becoming sluggish and want to reinvigorate them with a shorter, denser batch. Be aware that at 1:5, it's easier to over-ferment — taste-test at the early end of the time range.

Temperature and Fermentation Time

Temperature is the single biggest lever you have over kefir fermentation speed, after ratio. Kefir grains contain a symbiotic community of bacteria and yeasts that are most active between 68–80°F (20–27°C). Below 68°F, fermentation slows dramatically — you can intentionally exploit this by refrigerating your grains in milk to pause fermentation for up to 1–2 weeks when you need a break. Above 80°F, fermentation accelerates but the balance of organisms shifts: yeast activity increases relative to bacteria, which can produce an off-flavor or more alcohol than you want.

At a cool 68°F with a standard 1:10 ratio, expect a ferment time in the 30–40 hour range. At a warm 78–80°F, the same ratio batch may be done in 12–16 hours. Kitchens that run warm in summer and cool in winter will see meaningful seasonal variation — this is normal and expected. The calculator estimates a range rather than a single number because ambient temperature, grain health, and milk fat content all shift the result. Always use your senses as the final check: properly fermented kefir thickens noticeably, smells pleasantly sour (not rotten), and the whey may begin to separate slightly at the bottom of the jar.

Signs of Over- and Under-Fermentation

Under-fermented kefir looks and tastes almost like regular milk. It may have slight thickening at the top of the jar, but it pours freely, tastes only mildly sour, and doesn't have the characteristic effervescent tang. If you're getting consistently under-fermented kefir, either extend your ferment time, raise your room temperature, or check that your grains are healthy and active — grains that have been refrigerated for a long time or haven't been fed regularly can take several batches to wake back up.

Over-fermented kefir separates into distinct layers: a thick, curd-like top layer and a watery, yellowish whey layer at the bottom. The flavor becomes sharply sour, almost vinegary. The texture turns grainy or clumpy rather than smooth and pourable. Over-fermented kefir is still safe to drink, and the whey is excellent in bread or for fermenting vegetables — but the texture is unpleasant for most people. If you're consistently over-fermenting, shorten your batch time, use a cooler spot in the kitchen, or switch to the 1:20 light ratio to slow things down. The 24-hour daily cycle many kefir makers use is just a rough rule of thumb; your specific conditions may call for 16 hours or 36 hours instead.

Second Fermentation: Building Flavor and Fizz

The second ferment (2F) happens after you strain out the grains. You seal the finished kefir in a bottle — a swing-top or screw-cap bottle works well — and leave it at room temperature for an additional 12–24 hours. During this period, the residual bacteria and yeasts continue fermenting the lactose, producing more carbon dioxide, which builds up inside the sealed bottle and creates natural carbonation. The result is a sparkling, effervescent kefir that many people find more enjoyable than still kefir.

The second ferment is also the stage where you add flavors. Fruit is the most common addition: a few tablespoons of mashed berries, a slice or two of lemon, or some chopped mango added to the bottle before sealing will infuse into the kefir and also feed the microbes, increasing carbonation. Vanilla extract (a small splash), a piece of cinnamon stick, honey (add to taste, but go light — it ferments quickly), or dried fruit all work well. Keep in mind that the more sugar you add via fruit or honey, the more active the fermentation will be and the more pressure will build in the bottle — open carefully, or burp the bottles once or twice during the second ferment. After the second ferment, refrigerate the kefir. It keeps for 2–3 weeks in the fridge and continues to slowly develop flavor.

This is approximate because grain size varies; clumped, cauliflower-shaped grains weigh more per tablespoon than loose, small granular grains. When in doubt, slightly more grains than the ratio calls for is better than slightly fewer — you can always remove excess grains to give to friends or add to a second jar.

What kind of milk makes the best kefir?

Whole milk produces the thickest, creamiest, most nutritious kefir — the higher fat content contributes to a smoother texture and a richer mouthfeel. 2% milk works but produces a thinner result. Skim milk ferments successfully but yields a watery, very thin kefir that many people find unappealing as a standalone drink. Raw milk is excellent for kefir — the native bacteria in raw milk complement the grain cultures and tend to produce complex, well-rounded flavor. My kefir is too thin — how do I thicken it?

Thin kefir is usually the result of one or more of four things: low-fat milk, under-fermentation, grains that haven't been fully activated, or a very warm ferment that moved through the thickening stage too quickly. The easiest fix is to switch to whole milk if you're using reduced-fat. Second, try extending your ferment time by a few hours and taste-testing periodically — the kefir thickens noticeably as it approaches proper fermentation. Third, straining the finished kefir through a fine-mesh strainer or cheesecloth and letting it drip for 20–30 minutes produces Greek-style kefir that is thick enough to eat with a spoon and similar to labneh. This strained version is excellent as a sour cream substitute, in dips, or on tacos.

How do I store grains when I need a break?

For a short break of 1–2 weeks, put your grains in a jar with enough fresh whole milk to cover them completely, seal the jar, and refrigerate. The cold slows fermentation nearly to a halt. Swap the milk once a week if you're taking a longer break.
