Hanging Weight vs. Final Cut Weight: Where the Pounds Go

The drop from hanging weight to final cut weight — also called "take-home weight" or "packaged weight" — surprises most first-time hog buyers. You pay the butcher's processing fee based on hanging weight, but the meat you bring home weighs considerably less. The difference goes to bone, additional fat trim, skin (if removed rather than cured as crackling), moisture loss during chilling, and any off-cuts you choose not to keep. The standard assumption in the industry is that final cut yield is 70–75% of hanging weight for a standard cut-and-wrap order.

If you keep everything — bones for broth, leaf lard, back fat for rendering, head for headcheese, trotters, and jowl — your take-home weight climbs significantly above the 70–75% figure. If you ask for extra fat trim on the chops and heavy defatting on the shoulder, it drops. Optimal Slaughter Weight: The Sweet Spot Is 220–280 lbs

Freezer Space Planning

The standard planning figure is 35–40 lbs of cut, packaged pork per cubic foot of freezer space. This accounts for the irregular shapes of vacuum-sealed packages, air gaps between packages, and typical packaging density from a commercial butcher. A 250-lb pig at standard yield produces around 130–135 lbs of cut meat, requiring roughly 3.5–4 cubic feet of dedicated freezer space. A standard 7-cubic-foot chest freezer is plenty for a whole pig with room to spare for other things.

If you're ordering a whole hog, plan 4–5 cubic feet. If you're splitting a hog with another family, 2–2.5 cubic feet per half is adequate. Keep in mind that if you also keep bones, lard, and organ meats, your volume increases by 15–20% over the packaged meat weight alone. Bones are bulky relative to their weight.
