The single most common cast iron seasoning mistake is using too much oil. It feels counterintuitive — more oil should mean more seasoning, right? In practice, the opposite is true. Seasoning is not a layer of oil sitting on the pan; it's a layer of polymerized oil that has chemically bonded to the iron surface through a process called polymerization. When fat molecules are heated above their smoke point in the presence of iron, they break down and cross-link into a hard, plastic-like polymer. That polymer is your seasoning.
If you apply too much oil, the excess can't fully polymerize — it just sits on top of the cured layer in a half-baked, tacky state. What you get is a surface that feels sticky or gummy and picks up lint, food particles, and frustration. The fix is always the same: wipe on a thin coat, then wipe nearly all of it back off. The pan should look almost dry. What remains is the ~0.001mm film that actually polymerizes into durable, slick seasoning. Multiple thin rounds build up a much better surface than one thick application.
Olive oil is the most frequent mistake. It has a smoke point of only 375–405°F (extra virgin is even lower, around 325–375°F), and oven seasoning requires heating the pan 20–50°F above the oil's smoke point to trigger polymerization. That means you'd need to season at 425°F+ to get any polymerization out of olive oil — but at that temperature, the oil burns and smokes badly rather than curing cleanly. The result is a black, streaky, bitter-smelling coating that isn't true seasoning. Save olive oil for cooking in the pan once it's seasoned, not for seasoning itself.
Butter and coconut oil have similar problems — low smoke points, and coconut oil's lauric acid doesn't polymerize as effectively as the long-chain fatty acids in other oils. Spray oils like PAM contain lecithin and propellants that can leave a sticky residue if used for oven seasoning (though they're fine for occasional stovetop use). Unrefined nut oils like walnut or peanut also run low — stick to the high-smoke-point options above.
Flaxseed oil (linseed oil) became popular in the cast iron community around 2012 following a widely-shared blog post that claimed it produced a superior, hard, glass-like seasoning. The science behind it is real: flaxseed oil is extremely high in alpha-linolenic acid (ALA), an omega-3 fatty acid with multiple double bonds that polymerizes aggressively when heated — it's essentially the same chemistry as linseed oil used in oil-based paints and wood finishes.
The problem is durability. Flaxseed oil seasoning is indeed very hard when first applied, but it tends to flake off in sheets with regular cooking use, especially acidic foods or high-heat searing. The brittleness comes from the same aggressive polymerization that creates the hard surface — the cross-linked polymer doesn't flex well with the expansion and contraction of cast iron under cooking heat. Many experienced cast iron users who tried the flaxseed method found their seasoning peeling off after a few months of cooking. Crisco, lard, grapeseed, and avocado oil all produce more flexible, durable seasoning that holds up better over years of use.
Oven seasoning gives you controlled, even heat — the same temperature all the way around the pan, which produces even polymerization across the entire cooking surface. Campfire seasoning (or stovetop seasoning) is faster and produces a darker, thicker initial coating, but it's harder to control. Direct flame creates hot spots that can unevenly cure the oil, leaving some areas sticky while others are properly carbonized. If you're seasoning over a campfire or wood stove, use lard or Crisco (they're forgiving of variable heat), apply extremely thin coats, and keep the pan moving over the heat source. Campfire seasoning can actually build a very robust coating if done carefully — it's how cast iron was seasoned for generations before electric ovens.
Some people heat their pan briefly on the stovetop before wiping on oil, then transfer to the oven — this helps the metal expand slightly so the oil penetrates micro-pores in the iron surface more effectively. Preheat your oven to the target temperature before putting the pan in (rather than letting it heat up with the oven) for more controlled results.
Cook fatty foods first. The first few times you cook in a newly seasoned pan, choose fatty foods like bacon, sausage, or fried chicken. These deposit additional polymerized fat into the surface with every cook, building the seasoning layer further. Avoid eggs, fish, or acidic foods (tomatoes, wine, citrus) until the pan has been well-used and has a solid, dark, established seasoning.
The soap myth — debunked. For decades the rule was "never use soap on cast iron." This was valid advice when soap was made from lye and animal fat, and could strip old seasoning aggressively. Modern dish soap is a far milder detergent (usually sodium lauryl sulfate-based) and will not strip a well-established seasoning coating with brief, normal washing. You can use a small amount of dish soap to clean cast iron — just rinse promptly and dry thoroughly. What you should never do: let cast iron soak in water, put it in the dishwasher, or leave it wet. Water is the enemy, not soap.
Dry immediately after washing. After rinsing, either wipe dry immediately or put the pan on a low burner for a minute or two to evaporate all moisture. Leaving a wet cast iron pan — even briefly — is how light rust forms. If rust spots appear, a quick scrub with a steel wool pad followed by re-seasoning is all you need.
Storage. Store cast iron in a dry location. If stacking pans, place a paper towel or cloth between them to absorb any moisture and prevent the pans from trapping humidity against each other. A very light wipe of oil on the cooking surface before long-term storage (more than a few weeks without use) protects the seasoning. Don't store with the lid tight on a Dutch oven — this traps moisture inside.
Yes — the exterior and the bottom benefit from seasoning just as the cooking surface does. The bottom of the pan contacts the burner and is at high risk for rust if left bare. Most people do fewer rounds on the exterior since it's less critical for cooking performance, but applying oil to the outside and the handle during each oven seasoning session is good practice. Place the pan upside-down in the oven during seasoning (with a sheet of foil on the rack below to catch any drips) — this way excess oil drips off the cooking surface rather than pooling at the bottom and curing into drips.
A properly seasoned pan will be dark — either a charcoal gray or dark brown to almost black, depending on the oil and number of rounds. The surface should feel smooth and slightly slick when cool, not tacky or sticky. A simple test: fry an egg in a small amount of butter over medium heat. In a well-seasoned pan, the egg will slide freely and lift out cleanly without sticking. If it sticks or tears, the seasoning needs more rounds or was applied too thickly.
Light rust (surface orange spots on intact dark seasoning) can often be addressed without a full strip. Scrub the rust off with a chain mail scrubber, salt and a paper towel, or fine steel wool, rinse, dry completely, and do 2–3 seasoning rounds. A properly built and maintained cast iron seasoning lasts essentially forever. Cast iron skillets from the 1800s with original seasoning still exist and cook beautifully. The seasoning isn't consumed or worn out by cooking — it's supplemented with each use of fatty foods. What degrades seasoning is improper care: soaking in water, running through the dishwasher, cooking highly acidic foods repeatedly without re-seasoning, or storing wet. With basic maintenance — dry promptly, store dry, occasional touch-up rounds — a cast iron pan becomes a family heirloom.
Modern pre-seasoned cast iron (like Lodge) comes from the factory with a mechanically-sprayed vegetable oil coating that has been heat-cured. It's genuine seasoning, but typically only 1–2 rounds deep, and the texture is rougher than vintage cast iron because modern foundry methods use sand casting rather than the polished molds of vintage production. That rougher surface means food sticks more until additional cooking and seasoning rounds smooth it out.
