Frequently Asked Questions

Why does thickness matter so much for dehydration time?

Moisture has to travel from the center of the food to the surface before it can evaporate. The thicker the slice, the longer that journey. This is not a linear relationship — doubling the thickness more than doubles the drying time because the outer layers can dry out and create a surface barrier called "case hardening" that traps moisture inside. Case hardening is a real problem with jerky and dense vegetables: the outside looks and feels done while the center is still moist. Uniform slicing with a mandoline or sharp knife is the single most important step for consistent results. A mandoline set to 3 mm (1/8") for chips or 6 mm (1/4") for jerky produces slices that dry evenly and reach the same doneness at the same time, rather than a mix of overdone edges and underdone centers.

How do I know when my dehydrated food is actually done?

The clock is a starting point, not the finish line. Every dehydrator model, climate, and batch is different. The real test is physical: remove a piece, let it cool to room temperature for two minutes (hot food always feels drier than it actually is), and then test it. Jerky should bend without breaking, with no moisture visible when pressed and held for three seconds. Fruit leather and sliced fruit should be pliable and leathery with no wet or sticky center when torn in half. Vegetable chips should snap cleanly — any bendiness means more time is needed. Herbs crumble between your fingers. Blueberries and whole fruit should feel hard and dry all the way through, like raisins with no give. When in doubt, give it another hour and check again. Under-dried food will mold in storage; over-dried food just tastes tougher — you cannot hurt it by drying longer.

Can I dehydrate different foods at the same time?

Yes, with an important caveat: only mix foods that run at the same temperature and will not transfer flavors. Mixing garlic or onion with apples on adjacent trays will produce garlic-flavored apple slices — aromas transfer readily through the moving warm air. A good rule is to keep flavor categories separate: all fruit on one run, all savory vegetables on another, and meat always by itself (both for food safety and because meat runs at 160°F, much higher than fruit and vegetables). If you are mixing different vegetables at similar temperatures, it is usually fine as long as the flavors are compatible. You can mix vegetables that finish at different times by pulling done trays while the others continue. Never put raw meat in the same dehydrator load as anything else.

Do I need to blanch vegetables before dehydrating?

Most vegetables benefit significantly from blanching before dehydrating, and some require it for food safety and quality. Blanching — briefly boiling or steam-heating vegetables for 2–5 minutes, then chilling in ice water — does three things: it destroys enzymes that cause off-flavors and color loss during storage, it reduces surface bacteria, and it softens cell walls so moisture escapes more easily and drying time drops by 20–30%. The USDA and NCHFP recommend blanching for corn, green beans, carrots, potatoes, sweet potatoes, broccoli, and most starchy or cruciferous vegetables. Peppers and onions do not require blanching. Tomatoes should be dipped in boiling water for 30–60 seconds to crack the skins, which dramatically speeds drying. Kale chips and leafy greens do not need blanching — blanching makes them soggy and they will not crisp properly. Fruit is never blanched, though apples and other browning fruit should be dipped in a lemon juice solution (1 tablespoon per cup of water) to prevent oxidation.
