Wet Brine vs. Dry Brine: Which One Should You Use?

Both methods work. Neither is objectively better — they produce different results and suit different situations. Understanding the tradeoffs will help you choose rather than just defaulting to whatever recipe you found first.

Wet brining submerges the whole bird in a salt-and-water solution, typically with added sugar and aromatics. The bird absorbs liquid during the process, which means the final cooked turkey will be noticeably juicier and heavier than one that wasn't brined. The moisture gain is especially pronounced in breast meat, which is the most prone to drying out. The downside is logistical: a 15-pound turkey needs roughly 5–6 gallons of brine and a container large enough to hold both the bird and the liquid at safe refrigerator temperature. Most home refrigerators can't fit a standard stockpot with a turkey in it, which is why many people use an insulated cooler packed with ice, swapping the ice as needed to keep the brine below 40°F. Skin texture is the other tradeoff: wet-brined birds often steam slightly from the absorbed moisture in the first part of roasting, which can soften the skin. Patting the turkey completely dry and resting it uncovered in the refrigerator for a few hours after removing it from the brine (and before roasting) helps significantly.

Dry brining applies salt directly to the bird's surface with no water. The salt initially draws moisture out of the meat by osmosis, dissolves in that moisture, and is then reabsorbed back into the muscle tissue over 24–72 hours. The result is deeply seasoned meat rather than moisture-loaded meat. Dry-brined turkeys tend to have dramatically better skin — it crisps and browns faster because there's no excess moisture to drive off first. The process is also easier: no large container, no cooler logistics, no liquid to dispose of afterward. You simply salt the bird and leave it in the fridge on a rack. For a homestead or hunting context where you're cooking a wild turkey or a bird you've raised yourself, dry brining is often the more practical choice: the birds are typically leaner, the skin is tougher, and the dry brine method does more to improve skin texture without the risk of diluting the natural flavor with brine water. For a store-bought commercial turkey where juiciness is the primary concern, wet brining offers a more dramatic improvement in moisture retention.

Why You Should Never Rinse a Brined Turkey

Rinsing a brined turkey in the sink before roasting is a common instinct — the bird is covered in salt and aromatics, and the impulse to wash it off makes sense intuitively. Do not do it. Rinsing raw poultry spreads bacteria-laden water droplets across your sink, countertops, and any nearby surfaces in a splash radius that routinely reaches 18–24 inches. Studies by USDA food safety researchers have documented contamination on cutting boards, faucet handles, and surfaces more than two feet away from the sink during poultry rinsing. Any Salmonella, Campylobacter, or other pathogen present on the raw bird's surface is distributed throughout your kitchen in that process. Cooking destroys bacteria; splashing water does not.

The surface salt left after brining is not excessive and will not make the finished bird too salty — the salt concentration on the surface is already diluted and distributed through the meat. If you're worried about saltiness, reduce the brine concentration to 4% rather than rinsing. After removing the bird from the brine or from the dry-brine rest, simply pat it completely dry with paper towels, discard the towels, and proceed to roasting. The paper towel step is important: surface moisture on the skin is what prevents browning and crisping in the oven, so a thorough pat-dry is worth the extra 60 seconds.

Read the label before you brine. Many commercial turkeys — especially those labeled "self-basting," "enhanced," or "deep-basted" — have already been injected with a sodium solution, sometimes up to 8–9% of the bird's weight in added liquid. Common labels to watch for include phrases like "contains up to X% of a solution of water, salt, and natural flavors" or "basted with a solution containing..." on the front or back of the packaging. If you brine one of these birds, you're adding salt on top of salt. The result is typically too salty to eat.

Butterball turkeys, for example, are pre-brined from the factory. A standard fresh Butterball will likely say it has been treated with a salt solution. If you want to brine your own turkey, start with a "natural" turkey that lists only turkey in the ingredients — no added solution. Organic and heritage-breed turkeys from farmers markets or specialty butchers are usually unenhanced. Safe Brine Temperatures

The single most important safety rule for wet brining is temperature: the brine must stay at or below 40°F (4°C) at all times. Raw poultry is a high-risk food for Salmonella and Campylobacter. Between 40°F and 140°F is the bacterial "danger zone" where these pathogens multiply rapidly — doubling roughly every 20 minutes at room temperature. A turkey sitting in a bucket of warm brine at 55°F for 12 hours will develop dangerous bacterial counts regardless of the salt concentration, because typical brine concentrations (4–6%) are not high enough to be bacteriostatic.

Practical ways to maintain safe brine temperature: (1) Start with cold or ice-cold water so the brine is already below 40°F before the bird goes in. (2) Use a cooler with ice packs or ice bags around (not in) the brine container, and check the internal brine temperature with a thermometer every few hours. (3) If using a refrigerator, use the lowest shelf (coldest zone) and confirm your fridge is calibrated to 37–38°F before you start. (4) Some people freeze 2-liter bottles of water and place them directly in the brine to keep it cold — this dilutes the concentration slightly, so account for this if using an exact recipe. Never brine at room temperature, even briefly. The safe window is clear: 40°F or below, start to finish.

How does salt type affect my brine measurements?

Salt type does not change the amount of salt you need by weight — 1 ounce of Diamond Crystal, Morton's, and table salt all contain approximately the same amount of sodium chloride.
